Nestled within the elegant embrace of Brown’s Hotel, The Donovan Bar has long stood as a bastion of Mayfair’s refined cocktail culture, a space where heritage, art, and alchemy quietly collide. Named after the legendary British photographer Terence Donovan, whose bold, iconic portraits once helped define the Swinging Sixties, the bar now pays homage to its namesake’s eye for style and substance with a newly unveiled drinks menu titled Our Way.

The new Our Way menu is a masterclass in thoughtful evolution, a loving distillation of everything that makes the Donovan Bar a cornerstone of London’s luxury drinking scene. It’s a continuation of tradition, honed and elevated by the steady hands of cocktail legend Salvatore Calabrese, alongside Director of Mixology Federico Pavan and his dynamic team.

Built on the golden age of classic cocktails, Our Way leans into legacy with precision and poise. This is mixology as craft with each of the thirteen new serves taking a familiar favourite and refining it through the lens of contemporary technique and ingredient innovation. From the way the ice is cut to the manner in which every garnish is placed, Our Way is about unwavering excellence. Take the Eau de Martinez for instance, a fragrant, spirit-forward concoction that merges Seventy One Gin with the opulence of Don Julio 1942, softened by Rinomato Americano Bianco, enriched by Pedro Ximénez sherry and finished with an earthy trace of patchouli. It’s a drink that delivers complexity and poise in every sip.
